Ingredients
Wet Ingredients
- 3 ripe bananas (mashed)
- 2 tsp. ground flaxseeds
- 80 ml unsweetend plantbase milk (soy, oat, almond)
- 80ml sunflower oil
- 2-3 vanilla extract drops
Dry Ingredients
- 80g coconut sugar or date sugar
- 50g rolled oats
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon (optional, for warmth)
- 110g whole-grain flour
- 60g Plant Protein (plain flavor)
- 50g Tigernut flour
Optional Mix-Ins
- handfull of chopped walnuts, pecans, or vegan chocolate chips

How to Make Vegan Banana Bread
- Preheat the Oven
Preheat your oven to 180°C and lightly grease a 9×5-inch loaf pan or line it with parchment paper. - Mash the Bananas
In a large mixing bowl, mash the ripe bananas with a fork until smooth. They’re the secret to this bread’s moist texture! - Mix Wet Ingredients
Add the oil, brown sugar, plant-based milk, flaxseeds and vanilla extract to the mashed bananas. Whisk everything together until smooth and well combined. - Combine Dry Ingredients
In a separate bowl, whisk together the flour, tigernut flour, plant protein, baking soda, baking powder, salt, and optional spices (cinnamon) - Mix Wet and Dry Ingredients
Slowly fold the dry ingredients into the wet banana mixture. Stir until just combined—don’t overmix! - Add Mix-Ins
If desired, gently fold in nuts, chocolate chips, or any other fun mix-ins. - Bake
Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. - Cool and Serve
Let the banana bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!
