Fudgy Matcha, No-Crash White Chocolate Cookies

There is something special about the combination of earthy Matcha and creamy white chocolate. But usually, a cookie this „fudgy“ comes with a side effect we all know too well: the dreaded 3 PM sugar crash.

I’m lately trying all kinds of different treats – that’s my latest favorite: The ultimate afternoon treat without the sugar crash.

Matcha White Chocolate Cookies (Sugar-Free & Gluten-Free)

I’ve given this recipe a healthy, vibrant makeover. By replacing sugar with Xylitol and using a Gluten-Free flour blend, these cookies offer a guilt-free way to indulge in that signature "fudgy on the inside, crispy on the edge" texture.

Ingredients
  

Ingredients (approx. 9-10 cookies):

  • 113 g Butter (softened)
  • 140 g Gluten-Free Flour You can also replace it with whole flour.
  • 5-10 g Matcha Powder (adjust based on how "green" you want it)
  • 150 g 150g Xylitol You can use brown and white sugar if you want.
  • 1 M Egg (cold)
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • 1 g Salt
Mix-ins:
  • 100 g Sugar-free white chocolate chips If you want to use really good chocolate: Valrhona

Equipment

  • 1 Mixing bowl
  • 1 Handmixer
  • 1 kitchen scale
  • 1 Spartula
  • Bleche + Backpapier

Method
 

  1. Quick Instructions:

  2. Combine: Use a hand mixer to blend the softened butter, Xylitol, and Matcha powder for 20–30 seconds. (Don't over-mix!)
  3. Egg: Mix in the cold egg until just combined.
  4. Dry Ingredients: Fold in the GF flour, salt, leavening, and white chocolate chips until the dough just comes together.
  5. The Secret Step: Scoop the dough into balls and refrigerate overnight.
  6. Bake at 175°C for 12 –13 minutes.
The Hack:

Use a cookie cutter or glass to "scoot" the cookies into a perfect circle immediately after they come out of the oven.
