Ingredients

Wet Ingredients

  • 3 ripe bananas (mashed)
  • 2 tsp. ground flaxseeds
  • 80 ml unsweetend plantbase milk (soy, oat, almond)
  • 80ml sunflower oil
  • 2-3 vanilla extract drops

Dry Ingredients

  • 80g coconut sugar or date sugar
  • 50g rolled oats
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional, for warmth)
  • 110g whole-grain flour
  • 60g Plant Protein (plain flavor)
  • 50g Tigernut flour

Optional Mix-Ins

  • handfull of chopped walnuts, pecans, or vegan chocolate chips

How to Make Vegan Banana Bread

  1. Preheat the Oven
    Preheat your oven to 180°C and lightly grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mash the Bananas
    In a large mixing bowl, mash the ripe bananas with a fork until smooth. They’re the secret to this bread’s moist texture!
  3. Mix Wet Ingredients
    Add the oil, brown sugar, plant-based milk, flaxseeds and vanilla extract to the mashed bananas. Whisk everything together until smooth and well combined.
  4. Combine Dry Ingredients
    In a separate bowl, whisk together the flour, tigernut flour, plant protein, baking soda, baking powder, salt, and optional spices (cinnamon)
  5. Mix Wet and Dry Ingredients
    Slowly fold the dry ingredients into the wet banana mixture. Stir until just combined—don’t overmix!
  6. Add Mix-Ins
    If desired, gently fold in nuts, chocolate chips, or any other fun mix-ins.
  7. Bake
    Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Serve
    Let the banana bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!
