  • 3 ripe bananas mashed
  • 2 tsp. ground flaxseeds
  • 80 ml unsweetend plantbase milk soy, oat, almond
  • 80 ml sunflower oil
  • 2-3 vanilla extract drops
Dry ingredients:
  • 80 g coconut sugar or date sugar
  • 50 g rolled oats
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon optional, for warmth
  • 110 g whole-grain flour
  • 60 g plant Protein plain flavor
  • 50 g tigernut flour

Method
 

  1. How to Make Vegan Banana Bread
  2. Preheat your oven to 180°C and lightly grease a 9×5-inch loaf pan or line it with parchment paper.
  3. Mash the Bananas in a large mixing bowl with a fork until smooth. They’re the secret to this bread’s moist texture!
  4. Add the oil, brown sugar, plant-based milk, flaxseeds and vanilla extract to the mashed bananas. Whisk everything together until smooth and well combined.
  5. In a separate bowl, whisk together the flour, tigernut flour, plant protein, baking soda, baking powder, salt, and optional spices (cinnamon)
  6. Mix Wet and Dry Ingredients
  7. Slowly fold the dry ingredients into the wet banana mixture. Stir until just combined—don’t overmix!
  8. If desired, gently fold in nuts, chocolate chips, or any other fun mix-ins.
  9. Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the banana bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!
